<p> Eliminating problem foods from the diet can dramatically reduce chronic inflammation disease (CID) symptoms, according to new research carried out by York University and YorkTest(1), leaders in food allergy research. The research, “Dietary advice based on food-specific IgG results,” was published in volume 37 of Nutrition and Food Science.</p>
<p>&#13;</p>
<p>Supporting recent clinical findings that identified the direct link between diet and various inflammatory diseases of the body(2), the new research offers potential hope to the 45 percent of the population who are thought to suffer from CIDs such as irritable bowel syndrome, arthritis and psoriasis.</p>
<p>&#13;</p>
<p>“This robust survey, the largest of its kind, gives a clear indication of the benefits that dietary change can make on some of the most common chronic conditions,” said Geoffrey Hardman of the University of York, co-author of the study.</p>
<p>&#13;</p>
<p>The research, taken from a section of 5,000 participants, showed that over 75 percent showed moderate to high improvement of their symptoms within three weeks by removing the problem foods identified by an IgG antibodies test, commonly used to identify food intolerances.</p>
<p>&#13;</p>
<p>Notable improvements among sufferers included ‘moderate to high’ reduction in symptoms (%) of: flatulence / wind (91%), upset stomach (90%), general aches and pains (88%); colitis (88%), fatigue (87%), rashes (84%) and arthritis (74%). Those with IBS symptoms showed a significant reduction in stomach distension, bowel dysfunction and general well-being, and also showed a reduction in factors such as pain and fatigue(3).</p>
<p>&#13;</p>
<p>Family health expert and media GP, Dr Hilary Jones, also commented: “Over the years, in my work as a GP, I have met many patients who suffer with chronic conditions such IBS and arthritis. These new, exciting findings, which show that these conditions may be linked to food intolerance, offer real hope for the many who suffer from the painful and debilitating symptoms of these conditions. It offers them a chance to get to the root of their problem by tackling the possible cause, rather than relying on long-term treatments for chronic conditions.”</p>
<p>&#13;</p>
<p>Food intolerance &#8212; not to be confused with a full-blown food allergy &#8212; is a delayed response to certain foods and can be a debilitating condition that affects long term health and quality of life with symptoms such as IBS, bloating, tiredness, migraines and digestive complaints. Some common food intolerances include dairy, corn, oat, and gluten intolerance.</p>
<p>&#13;</p>
<p>Sufferers often react to more than one food, which means it can be a timely process identifying which foods are causing the problems. Getting rid of food intolerance is about identifying the foods that are making you ill and subsequently eliminating them from your diet. Currently the NHS advocates an arduous process in treating food intolerance involving an elimination diet and food diary which often proves a lengthy process. </p>
<p>&#13;</p>
<p>The YorkTest is a simple finger-prick home testing service, which offers a simple solution to identifying up to 113 problem ‘trigger foods’. I&#8217;m making a dessert dish called panna cotta for the first time and the recipe calls for skim milk. I have 1% milk, will that ruin the recipe if I use that?</p>

<p><i>Answer by willa</i><br/>for that recipe it&#8217;ll be fine. usually there&#8217;s not a problem. i tend to use 2% or even whole in recipes that call for skim because i like the richness of it.</p>

A friend of mine came across a dilemma with displaying real food. The main issue is how to preserve said food. I came across with the idea of resin, but was wondering if there are any other more efficient means to do so. The main food(s) that are attempting to be preserved are deli meats for display in a large grinder. Thanks in advance.</p>

<p>Restaurants who do food displays in windows, etc to attract customers use sculptures called &#8220;Fake food.&#8221;  It doesn&#8217;t look fake &#8211; people often cannot tell it is not real.  It is created individual by artisans who work entirely in this medium.</p>

<p> Omaha Nebraska Food Banks got an unexpected boost this week.  $  30,000 worth of frozen food is being donated by Glutenfreeda Foods, makers of delicious gluten-free foods. The donation is completely gluten-free and fills eight pallets. </p>

<p>While it wasn&#8217;t planned this way, the news comes right at the beginning of Celiac Awareness Month.  Throughout May, celiac organizations around the world hope to shed light on this relatively unknown and poorly understood condition. </p>

<p>“It&#8217;s serendipity” says Yvonne Gifford, Glutenfreeda Foods CEO. &#8220;We have this delicious food and wanted to do something to make a difference.  We&#8217;re just delighted that we could donate it now &#8211; to garner attention for hunger here at home, and celiac disease everywhere.&#8221; </p>

<p>The donated foods, although created specifically for individuals on a gluten-free diet, are delicious and healthy for everyone. It’s Glutenfreeda Foods’ mandate: creating delicious gluten-free foods. Their assortment of foods ranges from gluten-free granola, burritos and oatmeal to new and first of its kind gluten-free pizza wraps, cheesecakes and ice cream sandwiches.</p>

<p>Ms. Gifford got help from the Celiac Sprue Association , a national non-profit organization supporting individuals with celiac disease that’s based in Omaha. They were able to liaise between Glutenfreeda Foods and the Omaha food banks, who were delighted to accept the generous offer because of their increasing need. </p>

<p>The Celiac Sprue Association also arranged transportation of the pallets to Omaha and storage. Currently frozen, the foods are being warehoused, free of charge, until they can be distributed. Ms. Gifford expressed gratitude to the association for all their help.</p>
